This allows the fruit to ripen slowly and evenly while maintaining its fresh acidity and aromatics. This vintage has soft elegant tannins and has flavors of plum, mocha, coffee, and maraschino cherries. On the nose you will find sweet red and dark fruit, chocolate, and holiday spice cake.
